Let’s start with the terrace, because how could we not? Suspended above the Mediterranean, COYA’s outdoor space is where late afternoon cocktails turn into candlelit dinners, and strangers become soulmates by dessert. This season’s centerpiece: the reimagined Pisco Bar, a shrine to Peru’s most beloved spirit.
Enter the Pisco Macerado 1615, a sultry blend of passion fruit and heritage Pisco, co-created with Peru’s legendary 1615 distillery. As the first of its kind, this Pisco Macerado is set to shake up Peruvian mixology with this signature creation.



When the Beat Sounds, the Night Begins
At COYA, the soundtrack leads the night. 2025’s sonic lineup features Benny Benassi, Bob Sinclar, and a rotating cast of international DJ royalty. Take note for your calendar:

Victoria Vallenilla orchestrates fiery ceviches, smoky robata-grilled lamb ribs, and the kind of seafood aimed to make you rethink the meaning of “fresh.”
Highlights from her 2025 menu include Signature Ceviche , lightning in a bowl, new creations like Chu Toro Tuna Ceviche with Ponzu where ocean meets umami with a citrus kiss. Don’t forget the Spicy Octopus Chaufa Rice, comfort food, redefined with attitude. And of course the Robata-grilled lamb ribs!
