Located beside a pool designed by Karl Lagerfeld, Zia at Odyssey is making its grand return on 20 April 2026. Directors Manon Santini and Rocco Seminara have unveiled a contemporary, vibrant, and generous Italian menu, available from breakfast until dinner and beyond…
“Open to hotel guests and outside visitors alike, Zia at Odyssey celebrates the Italian art of living from April to October in an elegant yet relaxed atmosphere,” says a recent press release by the Hotel Metropole.
What’s on the menu?
Located in the prestigious Carré d’Or, a stone’s throw from the Casino, the Hôtel Métropole was first inaugurated in 1886. Completely reimagined by Jacques Garcia, the palace-like establishment is known for “blending Mediterranean charm with timeless elegance”.
Zia’s freshly unveiled Italian breakfast menu includes crispy sfogliatella filled with vanilla cream and strawberries; hazelnut biscuit with a melted milk chocolate centre; or a delicate Parmigiano Reggiano DOP soufflé, enhanced with truffle or Kristal caviar.
At lunchtime, Zia’s new menu will feature “fresh and intensely flavourful Mediterranean recipes”. For mains: Raw amberjack with Sorrento preserved lemon, smoked olive oil, and Trapani salt; Capocollo with Apulian tomato sauce, fior di latte, and ‘Nduja; or roasted sea bass fillet with puttanesca and parsley. For dessert: almond affogato with praline, intense coffee, and vanilla ice cream; candied strawberries with vanilla and Sicilian pistachio cream; and Sicilian cannoli with lemon and ricotta and fresh zest.

Zia Aperitivo: sharing dishes and vibrant music at the golden hour
As the days ends, Zia will be offering signature cocktails like the Negroni Rosa or the Frozen Negroni, set to music which is “initially soft and subdued and gradually gains intensity as the atmosphere becomes more vibrant”. Antipasti, focaccia, and airy pizzas are all on the dinner menu.
“We share, we savour, we linger over lunch in a modern and welcoming dolce vita, like on a sun-drenched piazza where conversations flow and the hours drift by gently,” says Manon Fays, Director of Press and Public Relations at the Hôtel Métropole.
Zia Cena: Italy Under a Starry Sky
Starting on 27 May, the nighttime menu will include antipasti and signature creations like stretchy provolone, aged capocollo, and a light emulsion of 36-month-aged Parmesan; intense tomato, fresh basil, stracciatella, and Sardinian bottarga (pappa al pomodoro); and “the ever-popular pizzette”.

The Negroni Club: a bespoke version of the great Italian classic
The Negroni Club invites anyone to create their own personalized Negroni. The principle is to draw an illustrated card from each category—gin, bitters, vermouth, and aromatics—and “let the magic happen”. The endless combinations create unique mixes.
In addition to this approach, there are five signature recipes created by Manon Santini and Rocco Seminara, including the Mezcal Negroni with smoky accents, the Verde Negroni with fresh, herbaceous notes, and the Rosa Negroni, subtle and delicately spiced.
