Fairmont Monte-Carlo’s Bistro Lounge and Bar Saphir24 get a Makeover

New atmosphere

The Bistro Lounge and Saphir24, open 24 hours a day, have just reopened after being revamped. Inspired by the famous yacht brand Riva, the restaurant menu, its style and atmosphere have seen a total transformation. In an intimate and elegant atmosphere, this restaurant offers a breathtaking view of the sea.  The kitchen is open at any time from breakfast to dinner, with traditional French specialties on the menu.

Executive Chef Didier Aniès took advantage of this revival to focus his cooking on recipes from yesteryear from the best French bistros, while giving it a contemporary touch of quality. He has taken up some timeless classics ranging from “Snail Profiterole” to “Braised Beef Cheek”, always using rich and local ingredients to add to his modern and elegant style and surprise his customers. The wide selection of cocktails, wines and spirits will also allow visitors to enjoy Saphir24 as a lounge, bar or bistro, depending on they wants. Every Sunday, the famous Sunday Jazz Brunch offers a rich buffet to the sound of live music, with the Kids Club open for the little ones.

New spirit with Executive Chef and MOF Didier Aniès

Didier Aniès has more than 30 years of culinary experience.  He obtained a Michelin star during his stay at La Coupole de Monte-Carlo and the Grand Hotel du Cap Ferrat, which earned him the respect of the industry for his work. This exceptional chef, proud of his Southwestern roots, enjoys working with fresh, local products that allow guests to experience his rich history. His new menu at Saphir24 is the embodiment of the passion that drives him, knowing how to integrate a real elegance in his dishes, while creating powerful and intense aromas that amaze the most demanding taste buds.
