Sustainable Fishing: Three More Monaco Restaurants join Mr. Goodfish

Three more of the Société des Bains de Mer’s restaurants have officially joined the European Mr. Goodfish program. The new additions bring the total number of SBM restaurants committed to sustainable fishing to 18.

Three more of the Société des Bains de Mer’s restaurants have officially joined the European Mr. Goodfish program. Stéphane Valeri, CEO of the SBM, and Paul Ruchon, Project Manager for Mr. Goodfish, signed the three new agreements on Thursday 2 April 2026 in the Salon Régence of the Hôtel Hermitage. The new additions bring the total number of SBM restaurants committed to sustainable fishing to 18.

“I would like to commend the involvement of all our chefs, their teams, and restaurant managers, who actively participate in the collective effort we support for sustainable development. Their commitment demonstrates a desire to fully integrate the challenges related to preserving marine resources, and more broadly, a strong intention to offer increasingly sustainable and seasonal cuisine,” said Stéphane Valeri.

What the commitment means…

Four times a year, Mr. Goodfish publishes a list of seafood products available on the market that meet sustainability and resource conservation requirements. Participating restaurants commit to offering at least two dishes from this list and to informing customers with a logo.

The European Mr. Goodfish program promotes sustainable seafood consumption through several criteria, including the species’ diet, farming practices, minimum size, and fishing seasons outside of spawning periods.

Over 10 years of partnership

The SBM began its partnership with Mr. Goodfish in 2015 with Vistamar, (renamed Le Pavyllon) at the Hôtel Hermitage. Other establishments quickly joined the program, including L’Hirondelle at the Thermes Marins in 2016, Blue Bay Marcel Ravin in 2017, Café de Paris Monte-Carlo in 2019, Le Grill in 2020, Elsa, Le Deck, Maona, Le Salon Rose, and Le Train Bleu in 2024. The latest establishments to join the program are L’Orange Verte, L’Abysse, Marlow, Em Sherif, and the Hôtel de Paris Monte-Carlo’s wellness area cuisine and room service.

Created by the largest aquariums in Europe

The European Mr. Goodfish program has been promoting sustainable seafood consumption since 2010. The program was created by three aquariums: Acquario di Genova in Italy, Aquarium Finisterrae in Spain and Nausicaá in France (the largest aquarium in Europe).
