The Monegasque Hotel Trade’s Annual Prize Awards

The annual Gala of the Monegasque Hospitality Industry Association (AIHM) took place on Friday 13 January, at the invitation of Xavier Rugeroni, Director General of the Fairmont Monte Carlo Hotel.  An amazing dinner on the theme of “All About Chocolate” was served for the occasion.

As usual, the leading chefs from the Principality were showcased at this annual meeting. Marcel Ravin and Philippe Johannes vied with each other to demonstrate their creativity, revisiting foie gras and sea bass with a touch of chocolate, giving an unusual balance to these traditional French dishes.

The masterpiece, however, was produced by the guest for the evening, Jean-Charles Brédas, the renowned chef from Martinique, whose complex flavours of smoked beef with cocoa beans impressed those present.  In addition to representatives of the Monegasque hotel industry, these included H.E. Mr. Henri Fissore and Martiniquan filmmaker Euzhan Palcy.

At the end of this evening event, three prizes were awarded, in the presence of H.E. Mr. Henri Fissore.  The Prize of Honour was presented to Mr. Stéphane Valéri, Minister of Health and Social Affairs, the Merit Prize to Ms. Bruna Maule Cassio, of the “Guardian Angels” Association of Monaco (Association des Anges Gardiens de Monaco) and the Excellence Prize to Mr. Guillaume Rose, Director of Monaco Tourist and Convention Authority.

As a reminder, Alberte Escande, who has been President of the AIHM for more than 20 years, initiated the “Artisan of Flavour” (“artisan du gout”) label, which is awarded to restaurateurs whose menus feature products and dishes based on healthy cuisine that respects the environment.  Concluding the evening, the Vice-President of the AIHM, Francis Poidevin, emphasised that “excellence is the reward for a long professional journey of working with the heart and mind.”
