The story of the Fernet Monte-Carlo restaurant began with a sincere moment in Monaco when a member of the establishment’s current team was simply “not feeling quite himself.” Around a generous meal shared among friends, the person’s energy and smile returned. From this authentic shared moment, Le Fernet Monte-Carlo was born. Opened in 2026, Le Fernet is a brasserie reimagined as “a true gourmet sanctuary”.

“At Le Fernet, hospitality is a promise, and every guest is welcomed with the warmth reserved for close friends…. The lively spirit of Parisian dining meets Monaco’s understated sophistication, creating an experience that is warm without excess, elegant without pretension, and vibrant yet intimate,” says a recent press release by Fernet Monte-Carlo.
Designed by Rodolphe Parente
To shape its visual identity, Le Fernet Monte-Carlo entrusted its interior design to renowned Parisian designer Rodolphe Parente, who trained under the legendary Andrée Putman. His distinctive approach blends contemporary design with fine craftsmanship inspired by the 1930s, 1970s, and 1980s.


Warm wood panelling, aged brass, mirrors, and crisp white tablecloths compose an atmosphere that feels “both familiar and elevated, softened by a distinctly Mediterranean sensibility”.
The Menu
At the helm of the kitchen, Chef Mathieu Dorlac brings together the grand tradition of French brasseries with a locally driven gastronomic approach.
“At Le Fernet, nothing is left to chance: respect for the product, precision in every gesture, sincerity on the plate,” says Chef Mathieu Dorlac.

Starters include reimagined classics built around seasonal vegetables, foie gras, seafood, and shellfish. Main courses feature inspiration from both land and sea, alternating meats with elevated brasserie classics. Desserts rooted in the prestigious heritage of French pastry-making complete the food menu.
Wine
Imagined by Head Sommelier Florine Huby, the wine cellar at Le Fernet pays tribute to the richness and diversity of the terroirs through a unique dialogue between wine and illustration.
Each region, from the peaks of the Jura mountains to the sun drenched landscapes of Corsica, is highlighted through an original artwork “echoing the personality of the selected wines”.

“At Le Fernet, the wine list is designed to be explored like an art gallery,” says a recent press release by Fernet.
Le Fernet is set to become a new meeting place in Monaco – for lunch, dinner, or simply to raise a glass.
